This is a blend of 80% Pinot Noir and 20% Chardonnay.
Dosage: 9g/Liter
The Brut Grand Cru is a blend made with Bouzy Pinot Noir and an addition of Chardonnay from Chouilly, two highly rated Grand Cru villages.
The Pinot Noir impairs structure and intensity while the Chardonnay brings subtlety and finesse to the wine.
The primary fermentation is done in temperature controlled stainless steel tanks ensuring optimum preservation of the fruits and freshness. This is followed by the malolactic fermentation process to give body and character.
After bottling the wine is aged on the lees for 36 months. Once disgorged the bottles are left to rest for a minimum of 3 months to allow the wine to settle and blend in nicely with the dosage and offer the ultimate balance and freshness.

Tasting Notes:

Color: Pale yellow with a slow but steady cordon of very fine bubbles.
Nose: Intense classic and elegant nose with some yeast showing.
Floral with wild rose and vinous at the same time. Fresh fruits with apricot, lychee, mango and hints of green plum.
Palate: In the mouth it is harmonious, fresh with a copious long finish.
Other: This Champagne is great with food and will go well with poultry or fish.
