Vinification:
This is a blend of 70% Pinot Noir and 20% Chardonnay, including 10% of Bouzy Rouge AOC Coteaux Champenois.
Fresh and harmonious, this Rosé is made from champagne blended with red wine from Champagne (Rosé d’assemblage).
Dosage: 9g/Liter.
The first fermentation takes place in stainless steel tanks, to ensure optimal preservation of the primary aromas from the grapes.
After the first fermentation and before racking/bottling, about 12% red wine from Bouzy is incorporated into the white Champagne base blend.
The wine is aged over 36 months, after disgorgement the bottles are left to rest for a minimum of 3 months to allow the wine to settle and blend in nicely with the dosage and offer the ultimate balance and freshness.
