Vinification:
This is a blend of 70% Pinot Noir et 30% Chardonnay.
"Les Fervins" is a magnificent location or 'lieu dit' in Verzy. It is ideally situated on a 15% slope facing south-east. The Penet family owns an illustrious plot planted with both Pinot Noir and Chardonnay, on this plot stands a cross which has become the Penet-Chardonnet logo. Les Fervins is made exclusively from this vineyard, it is quite unique in Champagne to have a single vineyard wine. It is one of the very few Grand Cru Champagnes made from a single vineyard. It represents the ultimate achievement for the Penet family's heritage, the relentless search of the 'holy grail' of the Terroirs within Verzy and Verzenay, supported by extensive viticultural research done more recently.
Fermented in stainless steel vats, no malolactic fermentation and aged on the lees, 3 g/liters dosage. Bottled on the 3rd of May 2010 and less than 5000 bottles made.
For optimum aging and traceability the disgorgement date is mentioned on the back label and each bottle is individually numbered.
The choice of a dark color glass bottle is to improve the aging potential of the wine even further.

It is remarkably balanced, it is complex and full bodied it also has a very long and mineral finish, true to the character of the chalky soil it stems from. |

This is a great aperitif wine, it will also go very well with poultry, fish or delicate cheeses.
