Vinification:
This is a blend of 2/3 Pinot Noir and 1/3 Chardonnay.
Made from a special selection of parcels located in Verzy and Verzenay, two of the best Grand Cru villages in Montagne de Reims. Blended with oak barrel matured reserve wine, this very fine Champagne represents the quintessence of the local terroir while expressing the Penet-Chardonnet style; richness, complexity and minerality. This Champagne was aged for 36 months minimum on the lees.
A 6g/liter dosage Extra Brut Champagne, fewer than 8000 bottles made, for optimal aging and traceability, the disgorgement date is mentioned on the back label and each bottle is individually numbered.

Light gold, hinting at its maturity. |
Nose: |
Fresh, lemon and brioche. |
Palate: |
It is rich and full of ripe grapefruit and melon, which soften up in the mid-palate, followed by hints of vanilla and toasted nuts. Great acidity providing balance with a long mineral finish. |
Other: |
This Champagne will pair well with foie gras and horseradish, grilled celery roots, cold appetizers, poultry with a creamy sauce or even cheese such as Chaource.
