Vinification:

The first fermentation is done slowly in oak barrels followed by malolactic fermentation.
After racking, the bottle fermentation or ‘prise de mousse’ phase and aging are done in the cellar using classic closures. Aging takes place for 60 months minimum.
After disgorgement a low 6 g/l dosage is added, the wine is aged for another 6 months before release, to give the wine the necessary time to absorb the dosage and find the ideal balance.
Variance has been made since 1995 and it is the only Bonnaire Champagne made in oak barrels, this is a rich, aromatic wine designed for gastronomy.

Tasting Notes:

Color: Light gold.
Nose: It is aromatic with bitter oranges, grapefruit, citrus and quince, gingerbread and wild herbs.
Palate: Complex in flavor with vanilla and butter notes overlaying the citrus. A lingering and unctuous finish. It has depth and is harmonious.
Other: It is great as an aperitif, served with comté cheese, also an ideal food wine, it will pair well with a scallop carpaccio, a shell fish Risotto or a fruit tart for dessert.
