Vinification:
The primary fermentation is done in temperature controlled stainless steel tanks.
After racking, the bottle fermentation or ‘prise de mousse’ phase and aging are done in the cellar using classic closures. The wine is aged for a minimum of 36 months.
It is a blend from several vintages with 15% reserve wine.
This wine shows the Cramant terroir at its best during its youth, oozes freshness, showing at once great acidity and balanced dosage enabling aromas to express themselves freely. Great length in the mouth finishing on fresh and mineral notes.

It is fresh and structured, with suppleness and balance. This Blanc de Blancs is full of character and natural elegance, with great depth and minerality. It finishes on a rich note. |

A great aperitif wine although it is a rich style of Champagne and it will pair very well with a wide variety of dishes; a favorite with tuna or salmon tartare with a ginger and lime sauce or even duck foie gras mi-cuit. It will also pair well with chicken in white sauce with mushrooms or Vacherin Mont d'Or cheese. |
