This is a blend of 40% Chardonnay, 30% Pinot Noir and 30% Pinot Meunier.
The primary fermentation is done in temperature controlled stainless steel tanks.
It is a blend from several vintages with 15% reserve wine.
After disgorgement a 9g/l dosage is added, after that the wine is kept for a minimum of 3 months before leaving the cellar. The 3 month period is a minimum for the wine to assimilate the dosage and find its balance.
The wine is aged for 24 months minimum.
Champagne of great balance with the accent on the fruit and ease of appeal with light spicy notes, it is an excellent aperitif in a classic style.

Tasting Notes:

Color: Pale yellow.
Nose: It is bright and precise with flowery and fruity aromas; some Jasmine and green tea mixed with aromas of pear, grapefruit and citrus.
Palate: Elegant mousse, it is rounded and fresh at once, the finish is bold, long and fruity.
Other: Bonnaire Tradition is an appealing style of Champagne, it is uncomplicated and great served as an aperitif but will also complement Japanese cuisine, shell fish or poultry.
