Vinification:

Albert Ponnelle produces wines using organic and biodynamic
methods.
Harvest is done by hand in the cooler hours of the morning.
Strict sorting of the fruits at harvest, the fruits that are not to the
required quality standard are discarded. Long maceration process,
75% of the grapes are de-stemmed, indigenous yeast is used to
ferment, the fermentation phase took 15 days to complete.
Aged in barrels over 14 months with 20% new barrels.
Bottled using gravity, no fining or filtration.

Tasting Notes:

Color: Intense crimson.
Nose: Fresh aromas of cherry, raspberry and some
blackcurrant. Slight hints of game and spices on the
nose.
Palate: It is dense and elegant, full bodied, structured and
well balanced. Subtle and soft tannins.
Other: It will pair well with roast lamb, fattened duck or game
such as partridge, also will go well with carp in red
wine sauce, cheeses such as Époisses and Langres.
