Vinification:

Albert Ponnelle produces wines using organic and biodynamic
methods.
Harvest is done by hand in the cooler hours of the morning.
After harvesting, the grapes are taken to the cellar, de-stemmed,
pressed and fermented slowly over a couple of weeks.
Aged for 12 months in oak barrels. Slightly filtered before bottling.

Tasting Notes:

Color: Light gold.
Nose: Aromas of white flowers and hazelnut with a hint of
honey.
Palate: Buttery and mineral, fresh and well rounded, this wine
is elegant with a long finish.
Other: This wine will pair well with fish served with a
white sauce. Its fruity characteristics allow for
pairing with hard cheeses such as Comte, it will
also go well with poultry served with a creamy
sauce.
