Vinification:

Albert Ponnelle produces wines using organic and biodynamic
methods.
Harvest is done by hand in the cooler hours of the morning.
After harvesting, the grapes are taken to the cellar, de-stemmed,
pressed and fermented slowly over a couple of weeks.
Aged for 12 months in oak barrels. Slightly filtered before bottling.

Tasting Notes:

Color: bright.
Nose: Hazelnut and flint.
Palate: It is mineral and crisp with a long and balanced finish.
Other: This Saint Romain will pair well with delicately
flavored fish, poached eggs or creamy cheeses such
as Camembert.
