Vinification:

Albert Ponnelle produces wines using organic and biodynamic methods.
Harvest is done by hand in the cooler hours of the morning.
After harvesting, the grapes are taken to the cellar, de-stemmed, pressed and fermented slowly over a couple of weeks.
Aged for 12 months in oak barrels. Slightly filtered before bottling.

Tasting Notes:

Color: Pale gold.
Nose: Flinty with hints of hazelnut.
Palate: Crispy with great minerality. Lingering finish with a balanced acidity.
Other: This Saint Romain will pair well with delicately flavored fish, poached eggs or creamy cheeses such as Camembert.
