Viticulture

Vineyard: Bush vines planted on a south facing slope.
Soil Type: Klapmuts, Escourt, Cartref and Bokkefvelt shale.
Vine Age: Between 5 and 25 years old.
Irrigation: Drip Method
Harvest Date:
Yield: 7 t/ha.

Vinification:

Harvested at 25 balling, handpicked and delicately crushed. Cold soaked through the night. Fermentation was started the next morning, pump overs every 4 hours. Lightly pressed and matured in french oak barrels for 18 months.
80% matured in 225 liters French medium toast oak barrels.

Tasting Notes:

Color: Deep purple hues.
Nose: Fresh mint and fynbos (local vegetation similar to garrigue).
Palate: Delicate fruit flavors; Cherry, raspberry and plum, finesse on the mid-palate with elegant fruits and well integrated oak.
Other: Will pair well with seared steak, spare ribs with BBQ sauce or lamb skewers on the grill.
