Viticulture

Vineyard:
Soil Type: Bokkeveld shale.
Vine Age: 15 years old.
Irrigation: No irrigation
Harvest Date: Hand picked at 25 degrees balling in February 2007.
Yield: 4 t/ha

Vinification:

After early morning harvest, the cool grapes are brought into the cellar and then undergo cold maceration for 3 to 4 days to extract soft tannins and ripe fruit flavors before allowing fermentation to begin. Throughout vinification handling was kept to a minimum to ensure that true fruit flavors were retained. 80% of this wine was matured in medium toast new French Oak barrels and 20% in American Oak barrels.

Tasting Notes:

Color: Deep garnet.
Nose: Aromas of smoky black cherry and violet.
Palate: This is a rich and powerful wine with unctuous black fruits and spices with firm tannins, stays elegant and refined.
Other: This Pinotage pairs well with game or lamb.
