Viticulture

Vineyard: Bush vines planted on a south facing slope.
Soil Type: Klapmuts, Escourt, Cartref and Bokkefvelt shale.
Vine Age: Over 10 years old.
Irrigation: Drip Method
Harvest Date:
Yield: 7 tons/ha.

Vinification:

Harvested at 25 balling, handpicked and delicately crushed. Cold soaked through the night. Fermentation was started the next morning, pump overs every 4 hours. Lightly pressed and matured in french oak barrels for 15 months.

Tasting Notes:

Color: Dark cherry and purple.
Nose: Fynbos, light peppery cloves with ripe plums.
Palate: Spiced red fruits. Lovely grip in the mouth of savory edged tannins with bright acidity. Vanilla spice comes through on the taste. Body is smooth and lush. There is a very long and generous finish. A lovely example.
Other: This Pinotage will go well with smoked duck, pulled pork, spicy BBQ or any meaty pizza.
