The southern part of Somontano has a dryer climate than the rest of the Aragón region. Fruit maturation takes longer and allows for the main grape varieties such as Cabernet Sauvignon and Merlot, to ripen to perfection and develop their most elegant features.
Fermentation takes place in stainless steel vats for 12 days at 26ºCentigrade.
Bodegas Delcamp believes in the influence of the moon on the wine and there for they only decant in the last quarters.
Maturation takes place in 50% American and 50% Allier French oak barrels.
Castillo Monesma 2002 is a blend of 70% Cabernet Sauvignon and 30% Merlot.
