The grapes are harvested at optimum ripeness when the pip's color has become brown, fermentation starts on its own with indigenous yeast and will stop by itself. The wine is bottled within 11 months from harvest, the bottles are stored in the cellar and released when the wine is finally ready for consumption. The 2004 was released in 2008.
