Vinification:
The Moenchreben Vineyard covers 17ha and is located in the Eastern side of Rorschwihr. Moenchreben is an Alsatian name that means the “Monks’ Vineyard”. The soil type is clayey-marly. Clay is the main component of this soft, but compact rock giving soils that are always heavy and fat. Within the clay or marl there are some small beds of limestone, dolomite or gypsum. The chemical fertility is high thanks to the powerful retention of various mineral elements by the clay.
The weathering of this type of rock is almost invisible and limited to a migration of the minerals and to an increase in the clay content. This makes the soil relatively impermeable, but the clay soaking the water makes it swell and thus often causes landslides.
The wines from these terroirs take longer to mature. The soil gives them a powerful structure offset by an array of mineral aromas.
