The Kappelweg vineyard is located in the North east of Rorschwihr and covers 5.7ha. Its Alsatian name means “the Path to the Chapel”.
The terroir is a blue gray marly-limy from Rupelien type. This terroir consist of thick deposits of marl and calcareous pebbles more or less cemented together. They form a rock called conglomerate. These stones and rock debris came from petroliferous submarine deltas 34 to 23 million years ago. The pebbles are limestones torn out from the relief in the hinterland, mostly from the yellowish white oolitic Jurassic limestone. These pebbles have been rounded down by the mountain streams, then coated and cemented in place by the marl where they were deposited. Sometimes limy sandstones formations occur between (yellow Rouffach sandstone). Thus, these terroirs have a variable composition. They are especially rich in calcium which can be assimilated by the plants. The clay minerals help fix other fertilizing elements. The climatic weathering of this conglomerate is not easily visible; the hard pebbles occur right up to the surface, sometimes even forming cliffs. The soil is deep and has average water retention. It is calcium and magnesium rich.
This terroir gives a powerful structure, richness, spicy aromas and a long life to the wines, it is also particularly suitable for Pinot Gris, Sylvaner and Gewurztraminer.
The grapes are harvested at optimum ripeness to impair rounder fruity flavors to the wine, pressed and left to start fermenting with indigenous yeast, fermentation will stop on its own. The wine is then left to settle and bottled within 11 months from harvest. This wine is released when it is ready for consumption.
