Vineyard: South facing.
Soil Type: Carboniferous pudding sandstone, but also on volcanic rock (spilite) and Ordovician schist.
Vine Age: 30 to 50 years old.

Vinification:

Hand harvested over several pickings, picked at optimum ripeness with botrytis and after undergoing passerillage.
Traditional fermentation and vinification in foudres.

Tasting Notes:

Color: Golden yellow with green hues.
Nose: The aroma will evolve with aging, scents reminiscent of licorice, chevrefeuille, hazelnut and citronella.
Palate: Beautiful feel in the mouth, great balance between the alcohol, the sweetness and the acidity, it is rich opulent, firm and focused.
Other: Thsi wine should be served at 8°Centigrade and decanted before serving when it is young.
Very good aging potential.
Good pairing with marzipan or Turkish delights.
