Vinification:
Hand harvested over several pickings, picked at optimum ripeness with botrytis and after undergoing passerillage.
Traditional fermentation and vinification in foudres.
Tasting Notes:
Color: | Golden yellow with green hues. |
Nose: | The aroma will evolve with aging, scents reminiscent of licorice, chevrefeuille, hazelnut and citronella. |
Palate: | Beautiful feel in the mouth, great balance between the alcohol, the sweetness and the acidity, it is rich opulent, firm and focused. |
Other: | Thsi wine should be served at 8°Centigrade and decanted before serving when it is young. Very good aging potential. Good pairing with marzipan or Turkish delights. |
