Vinification:

Hand harvested over several pickings, picked at optimum ripeness with botrytis and after undergoing passerillage.
A combination of traditional fermentation and vinification in foudres.

Tasting Notes:

Color: Golden yellow.
Nose: Rich aromas ranging from cooked apple to concentrated fruity aromas mixed with cinnamon and cumin. Lively and vibrant.
Palate: Soft and lingering on the palate.
Other: Great pairing with blue cheese, duck foie gras or fruit tarts.
