Viticulture

Vineyard: Fairtrade vineyards in the Piekenierskloof region.
Soil Type: Tafelberg sandstone soils with gravel under soil.
Vine Age: 17 years old.
Irrigation: Drip Method
Harvest Date: February.
Yield: 6 t/ha.

Vinification:

Six principles form the core of the Six Hats philosophy, "Partnership, Potential, Change, Equity, Dignity and Sustainability". Six Hats seeks to produce wines that will contribute to the lives of the people whose hard work is expressed in each bottle. There are minimum prices set for grapes and an additional percentage of the sales are given back to the community who uses the money to build schools, clinics and other projects to improve their lives.
SIX HATS IS A REGISTERED FAIRTRADE PRODUCER.

Grapes were handpicked and cold soaked for 24 hours to obtain the desired extract and character, fermentation is started with selected yeasts strains under controlled conditions at 26 °Centigrade.
Malolactic fermentation also took place in tank and aged for six months using French and American oak staves.

Tasting Notes:

Color: Intense red hues.
Nose: Ripe strawberries and plum.
Palate: It is clean and fresh on the palate with notes of ripe red and dark fruits with hints of Hoisin and smokey bacon.
Other: This is an elegant style of Pinotage and it will go well with smoked duck, pulled pork or lasagna. It can handle a fair amount of spice and will complement a hot Indian curry, it is also the perfect wine for a BBQ. As for vegetables is will be a great match with aubergines or mushrooms.
