Vinification:

Six Hats seeks to produce wines that will contribute to the lives of the people whose hard work is expressed in each bottle. There are minimum prices set for grapes and an additional percentage of the sales are given back to the community who uses the money to build schools, clinics and other projects to improve their lives.
Six Hats is a registered Fairtrade producer and purchasing a bottle of 6 Hats Fairtrade wine will help improve the livelihood of the FairTrade farmers.
VINIFICATION
Grapes are offloaded and crushed through the destemmer followed by a 4 hours long skin contact. Afterward it is pumped into the stainless steel fermentation tanks and fermented at low temperature from 12 to 14 days.
Bentonite, a natural clay, is then added for fining after which the wine is filtered. The wine is then cold stabilized at 4°Centigrade for 7 days.
