Viticulture

Vineyard: Fair Trade vineyards from the Swartland region.
Soil Type: Sandy and loamy soils.
Vine Age: 18 to 25 years old.
Irrigation: Drip Method
Harvest Date: First week of February.
Yield: Below 8 t/ha.

Vinification:

Six principles form the core of the Six Hats philosophy,
"Partnership, Potential, Change, Equity, Dignity and Sustainability".
Six Hats seeks to produce wines that will contribute to the lives of
the people whose hard work is expressed in each bottle. There are
minimum prices set for grapes and an additional percentage of the
sales are given back to the community who uses the money to build
schools, clinics and other projects to improve their lives.

Grapes are sourced from Fairtrade certified vineyards
predominantly in the swartland region. These 18 to 25 years old
year old vineyards are trellised and grow on sandy, loam soils. The
vineyards are meticulously farmed and managed to yield below 8
tons per hectare.

Grapes were handpicked very early in the morning allowing the
fruits to retain their natural flavors. Only the free run juice was used,
allowed to settle and inoculated with selected yeast strain,
fermented under controlled conditions at 12° Centigrade.

Tasting Notes:

Color: Pale.
Nose: Subtle fresh tropical notes with gooseberry and some
spice.
Palate: Crisp and lively, elegant balance between the tropical
fruits and the minerality.
Other: It will go well with sea food, pasta and summer
salads. Also a great aperitif wine.
