Vinification:
Grapes are predominantly sourced from Fairtrade
vineyards in the Swartland region. These are trellised
vineyards and grow on koffieklip and oakleaf soils.
The vineyards are meticulously farmed to produce wines with great depth.
Grapes were machine harvested and only the free run juice was used. Settled and inoculated with selected yeast strains in stainless steel tanks. Fermentation took place under controlled conditions at 12 °Centigrade.
